Pumpkin Protein Ball Recipe

Whether we are traveling to another country or traveling to work, eating healthy can be challenging.
Often times we reach for something quick and easy like a Protein Bar.
Well, as some labels may have us believe that they are healthy by using words like Natural or Thin, they are actually loaded with processed ingredients and preservatives.  Even the more “natural” bars may be high in sugar to add flavoring.
Making our own Protein Bars at home seems unreasonable.  Really? How on earth can we cut them up into those perfectly shaped rectangles?
BUT!  Protein Balls?!  Anyone can make those!

Since, Pumpkin is in season right now, I’ve whipped up this special healthy Pumpkin Protein Ball Recipe for you that is simple and perfect for our busy lifestyles.  These are Paleo friendly, Gluten Free, and Vegan!
Make a batch once a week and have them available as a snack or meal.

1 cup dates
1/2 cup pecans
1/2 cup pumpkin puree
1/4 cup hemp seeds
1/4 cup chia seeds
1/4 cup coconut flour (or almond flour)
1/4 cup shredded unsweetened coconut
2 tablespoons pumpkin pie spice
2 tablespoons maple syrup
1 tablespoon cinnamon
1. Soak dates in water for 10 minutes.
2. Add pecans to food processor and pulse until finely chopped.

 3.  Add all ingredients except for the shredded coconut into the food processor and blend until smooth.

4.  Take dough and roll them into 12 balls. Coat with Shredded Coconut.
